TIBETAN LAMB CURRY



Ingredients:

- 4 packets Just Cook It! lamb fillets - cubed
- 1 packet Saucy Spice Co Tibetan Lamb Curry blend
- 2 large onions - sliced
- 300 ml plain yoghurt
- 2 large tomatoes - chopped
- 2 cups chicken stock
- 2 tablespoons oil
- 12 small new potatoes - pre-boiled
- 1 tablespoon soy sauce
- Salt - to taste [Marinate 4 hrs or overnight. Cooking time 1.5 hrs]


Method:

Place Yoghurt, Soy Sauce and contents of Spice Sachet in a bowl and thoroughly mix. Add meat making sure it is well coated.
Refrigerate at least 4 hrs.
Heat oil in a deep-sided pan or wok, sauté onion. Add contents of whole Spice Sachet, stir until fragrant - 30 secs. Place stock, tomatoes, salt and contents of marinade bowl into the pan or wok. Stir well, bring to just boiling, turn heat down and simmer covered for 1 hr. Remove lid, continue simmering another 30 minutes, or until meat is tender. Stir in Potatoes to warm through.
Serve with fresh, sliced chilli and crisp green salad.
