RANGOON LIME CHICKEN





Ingredients:
- 4 Just Cook It! chicken thighs fillets - diced
- 1 packet Saucy Spice Co. Rangoon Spices
- 2 medium onions - chopped
- 2 cloves garlic - chopped
- 100ml chicken stock
- 1 tablespoon fish sauce
- 1 can of chopped tomatoes
- 1 tablespoon lime juice
- 3 tablespoons vegetable oil
- 1 teaspoon salt


Method
Heat oil in a deep-sided pan or wok. Sauté onion and garlic until lightly browned.
Add contents of Spice Sachet, stir until fragrant, about 30 secs. Stir in tomatoes, salt and chicken stock. Add chicken pieces, lime juice and fish sauce. Simmer covered until chicken is tender - about 30-40 minutes. Stir occasionally during cooking to avoid sticking, and to ensure even cooking.
Serve with cooked green vegetables or a crisp green salad.
